Pan Preparation

When baking, the preparation of the pan you use is just as important as the ingredients you choose.

When baking cakes, greased pans are a necessity if you want the cake to come out of the pan eventually. You can use pan spray, but  melted butter brushed on with a light hand works just as well. After greasing, a circle of parchment paper* is cut to fit the bottom of the pan. Lay the pan on the paper, trace a circle, and then cut it out with scissors.  Lay the paper into the greased pan, then lightly grease the paper too. This will ensure the paper comes off the cake.
