Capers
Native to the Mediterranean, capers are green buds from a small evergreen bush that are dried and pickled in vinegar brine, or packed in salt. Their flavor is tangy and salty, and they work nicely in acidic dishes. Look for them in the same grocery store aisle as pickles and olives. If you buy the salted version, be sure to rinse the salt off before you use them.
