Also known as mango powder and amchur, Amchoor is a powder made from mangos that are picked green, dried in the sun, and ground to a powder. It’s a common ingredient in Northern India and Nepal, used frequently in spice blends, including Chaat Masala.
Amchoor has a very tart, sour-apple flavor and is used like lemon or lime juice to awaken flavors of a dish. It contains citric acid and proteolytic enzymes (enzymes that break down protein), which not only add flavor, but act as a meat tenderizer.
